Sodium Bicarbonate (NaHCO3), commonly known as baking soda, is a white crystalline powder, odorless, slightly salty, soluble in water and insoluble in organic solvents. It is non-toxic, stable under normal conditions, and decomposes when heated, releasing carbon dioxide. It is widely used in both food industry and industrial fields as a important raw material and additive.
 
In food additives, it acts as a leavening agent, acidity regulator and bulking agent. It is widely used in bread, cakes, biscuits, fried foods and pastries to make products fluffy and porous. It is also used in beverages to produce carbon dioxide, and in food processing to adjust pH and improve flavor and preservation. Food-grade sodium bicarbonate meets national and international food safety standards, safe for human consumption.
